Abstract

本发明公开了一种利用山药淀粉制作麦芽糊精的制备方法,包括以下步骤:1)分离山药原料的蛋白质值得山药淀粉,将山药淀粉制成糊精后,加入酸液,充分搅拌后得到溶液;2)调节上述溶液的pH值为7.0‑7.5,向其内添加α‑淀粉酶,升温至110‑120°C,进行酶反应1‑2个小时;3)酶反应后将溶液降温至90‑110°C,灭活α‑淀粉酶,并向溶液内加入0.5‑1%的诺维信普鲁兰酶,经过过滤后获得中间溶液;4)将中间溶液利用淀粉酶进行水解,水解控制pH值为7.3‑7.5,水解6‑8个小时,烘干后制得麦芽糊精。本发明利用成本较低的山药制得的山药淀粉作为原料,使其制作成本降低。
The invention discloses a method for preparing maltodextrin with rhizoma dioscoreae starch. The method comprises the steps of 1, separating protein of a rhizoma dioscoreae raw material to obtain rhizoma dioscoreae starch, preparing rhizoma dioscoreae starch into dextrin, adding acid liquor, and conducting sufficient stirring to obtain a solution; 2, regulating the pH value of the solution to be 7.0-7.5, adding alpha-amylase to the solution, and increasing temperature to 110-120 DEG C for enzyme reaction lasting 1-2 h; 3, after enzyme reaction, reducing the temperature of the solution to 90-110 DEG C to inactivate alpha-amylase, adding 0.5-1% Novozymes pullulanase to the solution, and conducting filtration to obtain an intermediate solution; and 4, hydrolyzing the intermediate solution for 6-8 h with amylase, and conducting drying to obtain maltodextrin, wherein the pH value during hydrolysis is controlled to be 7.3-7.5. Rhizoma dioscoreae starch prepared from low-cost rhizoma dioscoreae is used as the raw material, so that preparing cost is reduced.
